Bird’s Milk is a dessert that has been widely loved in Russia for over 80 years, most commonly enjoyed as candies and square cakes. The recipe was originally invented in Poland.

Two years ago, I took the original recipe and modernized it, adapting it for molds to create a new format of this familiar dessert and use it as an alternative to chocolate figurines.

CREAMY, NOT OVERLY SWEET TASTE

 Made with agar-agar, not gelatin

The recipe is adapted by me for working with molds and includes two preparation options: classic Bird’s Milk made with butter or with cream. I recommend trying both versions and choosing the one you like most in taste.

REQUIRED EQUIPMENT:

  1. Stand (planetary) mixer — for whipping the ingredients. 

    Even a low-power mixer (around 1000 W) will work.
  2. Precision kitchen scales — to weigh ingredients accurately to the gram.
  3. A regular stovetop and a heavy-bottom saucepan — for cooking the syrup.
  4. A heating device — to keep the mixture at a workable temperature and allow you to work with molds for a longer time. An oven, multicooker, or thermal heating cap will work. A microwave is NOT suitable.
  5. Molds — 5–7 molds are enough to make your first figurines.

Molds are forms made of food-grade silicone into which the Bird’s Milk mixture is poured to create various shapes, figurines, and decor in different sizes.urines.

They can be purchased on marketplaces or in pastry supply stores.


In the course, I share information and links to well-known shops where you can buy them.

DOES NOT MELT IN HEAT, IS NOT SENSITIVE TO HUMIDITY, AND CAN BE FROZEN.

 Bird’s Milk figurines, unlike chocolate, do not melt in the sun and tolerate direct sunlight well.

 The dessert can be stored for up to 10 days in the refrigerator, or prepared in advance, stored in airtight containers and frozen for up to 1 month.

 It can be combined with other desserts, used as decor or as an addition to macarons, chocolate-covered strawberries, mochi, and more.

 It can be offered in cafes and pastry shops as a dessert that attracts attention.

Is the training suitable for any country?

Yes, the training is online and includes video lessons and written materials translated into English. You can watch and study from anywhere in the world, at a time that is convenient for you. Course access is valid for 1 year. All video lessons are translated from Russian into English with professional subtitles.

Can I pay in any currency?

Yes, you can pay in USD or EUR, and payment is available from any local currency.

I don’t speak Russian. Will I understand the explanations? Are the translations/subtitles accurate?

The course includes written lessons and video lessons. All written lessons are in English. All video lessons are translated from Russian into English with professional subtitles.

Will the course be translated into other languages?

At the moment, translation into other languages is not planned. However, if there are many requests for a specific language, a translation into that language will be considered.

What if I have no one to discuss this with and there is no community if I face difficulties?

If you have questions, you can message me directly on my English account (ссылка). In the future, I also plan to create a separate community for international students.

What equipment is needed to make Bird’s Milk?

You will need any stand (planetary) mixer, a heavy-bottom saucepan, a blender, molds, and the required ingredients. After payment, you get immediate access to the lessons, where all the necessary equipment is explained in detail. To get started, 3–5 figurine molds will be enough.

What happens after I pay for the course? How will I get access?

An email with access to the lessons is automatically sent to the email address you provided during registration. You can start learning immediately after payment.

Where can I get molds?

After payment, you get immediate access to the course. In the first module, there is a lesson explaining where to find molds in your country, along with some store links for certain countries. I’m not able to provide links for molds in every city and every country, so in some cases you will need to find them locally on your own.

What allergens are in the recipe?

The recipe contains egg whites and butter or cream (dairy products). Depending on the flavor you choose, additional allergens may be present, such as nuts, berries/fruits, and chocolate. You can avoid these allergens by not using those flavors. This is a gluten-free dessert.
